TERROR

 CARTE NOIRE is one of VMV - VIGNERONS DU MONT VENTOUX’s oldest brands. It is a

key element in its collection of prestige wines. It is the result of a drastic selection of up-land,

south-facing vineyards and of very skilful winemaking and wine ageing techniques. This wine

ascertains once more that VMV’s beautiful terroirs are gifted for the production of great wines

in AOC Ventoux.The climate is sunny, dry and well ventilated. The yield per hectare is very

low, a token of concentration and quality.

 Soils : chalky-clayey, rocky soil.

VINIFICATION

 The crop is carefully sorted out and totally de-stemmed. Each grape is vinified apart in

cement vats. The alcoholic fermentation lasts about 3 weeks with daily pumping-overs and

one weekly délestage. The batches of wine are then racked and transferred into cement vats

where they decant and complete their malolactic fermentation. A first blending is then effected

and the cuvée is transferred into oak barrels where it is aged for 10 months. The final blending

is then made and the wine is aged in vat for homogenisation and natural clarification until it is

bottled.

TASTING NOTES

 Appearance : Cherry red robe with crimson hues.

 Nose : Complex bouquet showing fruity aromas of cherry and blackberry and notes of

soft spices, liquorice, vanilla and coconut.

 Palate : In mouth, the attack is rich. A cool structure enables to enjoy distinctly each of

the aromatic nuances already found on the nose. This thoroughbred wine has a persistent

finish in which mineralic notes of a great elegance are revealed.

SERVICE & CELLARING TIPS

 Serve at : 17/18°C. It is recommended to open the bottle a couple of hours before

drinking.

 Wine & Food : Recommended on its own and to accompany lamb, beef and game dishes

as well as well matured cheeses.

 Cellaring : CARTE NOIRE is released when it is ready for drinking. Its can be cellared five

years and more after the harvest.
